Black Bean and Rice Salad

Served hot or chilled ... this is the perfect easy-to-prepare salad or side dish.

1 cup Minute® White Rice, uncooked
1 can (15 oz.) black beans, drained and rinsed
1 red bell pepper, cut into strips
1/2 cup fat free peppercorn ranch dressing
2 green onions, thinly sliced
1/4 cup fresh cilantro leaves, chopped
1 tsp ground cumin powder


  • Prepare rice according to package directions.
  • Place rice in large bowl.
  • Add remaining ingredients; mix lightly. Cover.
  • Serve at room temperature or chill several hours before serving.
  • Substitute: Prepare as directed, substituting chopped parsley for the cilantro.
