Greek-Style Lemon Chicken

A delicious mealtime main dish. Don't forget the feta cheese!

Makes 4 Servings


1 Tbsp olive oil
1 lb boneless skinless chicken breast, cut into strips
2 each minced garlic
2 cups Minute® Brown Rice or Minute® White Rice, uncooked
1 can (14 1/2 oz.) low sodium chicken broth
1/2 cup grated carrot
1/4 cup sliced pitted ripe olives
1 Tbsp grated lemon peel
1 Tbsp dried parsley flakes
crumbled feta cheese (optional)
lemon wedge (optional)


  • HEAT oil in large nonstick skillet over medium-high heat.
  • ADD chicken; cook and stir 6 to 8 minutes or until chicken is cooked through, adding garlic during last 3 minutes of cooking time. Add remaining ingredients except cheese and lemon wedges; stir until well blended. Bring to a boil; cover.
  • REMOVE from heat. Let stand 5 minutes. Sprinkle on feta cheese and serve with lemon wedges, if desired.
