Southwest Style Chicken Bowl

Makes 4 Servings


1 bowl Minute® Ready to Serve Family Size - White Rice
1 cup chopped chicken or chicken fajita
1/2 avocado, diced
1/2 cup cooked black beans
1/2 cup whole kernel corn
1/2 cup shredded Cheddar cheese
2 each green onions, sliced
1/2 cup salsa
1/4 cup sour cream (optional)


Heat rice according to package directions.  Place rice in the bottom of a large serving bowl.  Arrange chicken, avocado, beans, corn, cheese and green onions on top of rice.  Top with sour cream and green onions.  Serve with salsa and sour cream, if desired.
