Tom Yum Gai Soup

Makes 1 Serving


1 cup Minute® Ready to Serve Rice and Quinoa
1/2 cup cooked chicken, chopped
1/2 cup chicken broth
1/4 cup light coconut milk
1/3 cup snow pea pods, sliced
1/3 cup carrot, julienned
1/4 tsp fish sauce
1 Tbsp lime juice
1/2 tsp sriracha hot chili sauce (optional)


Heat medley according to package directions.  In a medium microwave-safe bowl combine chicken, broth, coconut milk, snow peas, carrot and fish sauce.  Microwave on HIGH 1 minute.  Stir in medley, lime juice and sriracha sauce, if desired.
