Super Crunch Salad

Makes 1 Serving


1 cup Minute® Ready to Serve Rice and Quinoa
1 cup power blend coleslaw mix (Brussels sprouts, napa cabbage, kohlrabi, broccoli, carrots, and kale)
1 Tbsp sliced almonds
1 Tbsp dried cranberries
2 Tbsps citrus vinaigrette


Heat medley according to package directions.  In a medium bowl combine medley, power blend coleslaw mix, almonds, cranberries and vinaigrette.  Toss to coat all ingredients.
