Mediterranean Style Rice and Quinoa Salad

Makes 1 Serving


1 cup Minute® Ready to Serve Rice and Quinoa
1/4 cup cherry tomatoes, halved
1/4 cup cucumber, chopped
1/4 cup Kalamata olives, pitted and halved
2 Tbsps crumbled feta cheese
2 Tbsps Greek vinaigrette dressing
fresh mint leaves (optional)


Heat medley according to package directions.  In a medium bowl combine medley with tomatoes, cucumber, olives, cheese and vinaigrette.  Toss to coat all ingredients.  Garnish with mint, if desired.
