Chicken Banh Mi Style Rice Bowl

Makes 4 Servings


1 bowl Minute® Ready to Serve Family Size - White Rice
3 Tbsps soy sauce
2 Tbsps sesame oil
2 Tbsps honey
1 cup cooked chicken, cubed
1/2 cup carrots, cut into julienne strips
1/2 cup cucumber, sliced
1 small jalapeño pepper, sliced
fresh cilantro leaves
fresh mint leaves
lime wedges (optional)


Heat rice according to package directions.  In a small bowl combine soy sauce, sesame oil and honey.  Whisk until well incorporated.  Place rice in the bottom of a large serving bowl.  Arrange chicken, carrots, cucumbers and jalapeno.  Pour dressing over top.  Serve with cilantro, mint leaves and lime wedges, if desired.
