Avocado Chicken Power Salad

Makes 1 Serving


1 cup Minute® Ready to Serve White and Red Quinoa
2 oz cooked chicken, chopped
1/4 avocado, chopped
1 cup power blend coleslaw mix (Brussels sprouts, napa cabbage, kohlrabi, broccoli, carrots, and kale)
4 cherry tomatoes, halved
1 Tbsp sliced green onions
2 Tbsps vinaigrette dressing


In a medium bowl combine unheated quinoa, chicken, avocado, greens, tomatoes and green onions.  Drizzle with vinaigrette and toss to combine.
