Corn and Edamame Rice Salad

Makes 1 Serving


1 cup Minute® Ready to Serve Organic Brown Rice
1/4 cup corn
1/4 cup edamame
1/4 cup cooked garbanzo beans
1/4 cup shredded carrots
1 green onion, diced
2 Tbsps basil pesto sauce


Heat rice according to package directions.  Cool.  In a medium bowl combine rice, corn, edamame, garbanzo beans, carrot,  green onion and pesto sauce.  Mix well.
