Fajita Rice Fiesta

Makes 1 Serving


1 cup Minute® Ready to Serve Organic Brown Rice
2 oz cooked beef or chicken fajita meat
1/2 cup frozen fajita-style vegetables (red, yellow and green peppers & onions), thawed
2 corn tortillas
2 Tbsps shredded Cheddar cheese (optional)
sour cream (optional)
salsa (optional)


Heat rice according to package directions.  In a small bowl combine rice, fajitas and vegetables.  Microwave on HIGH 1 minute.  Place tortillas on top of mixture and microwave on HIGH 20 seconds, or just until tortilla are soft.  Fill fajita mixture into warm tortillas and serve.

TIP:  Top with shredded Cheddar cheese, sour cream and salsa for added flavor.
