Coconut Curry Mango Rice

Makes 1 Serving


1 cup Minute® Ready to Serve Organic White Rice
1/2 cup red bell pepper, diced
1/4 cup unsweetened shredded coconut
2 Tbsps golden raisins
2 green onions, sliced
1/4 cup mango chutney
1/4 tsp curry powder


Heat rice according to package directions.  In a medium microwave-safe bowl combine rice, bell pepper, raisins, coconut, green onions, chutney and curry powder.  Microwave on HIGH 1 minute.

Tip:  Add 2 ounces cooked shredded chicken
