Cuban Mojito Quinoa Salad

Makes 1 Serving


1 cup Minute® Ready to Serve Organic Red Quinoa and Brown Rice with Garlic
1/3 cup black beans
1/4 cup green bell pepper, chopped
1/4 cup red bell pepper, chopped
1 green onion, chopped
1 1/2 Tbsps apple cider vinegar
1 Tbsp olive oil
1 Tbsp honey
1/2 Tbsp fresh lime juice
1 Tbsp fresh mint leaves


Heat quinoa and brown rice according to package directions.  In a medium bowl combine quinoa and brown rice, beans, red and green bell peppers and green onion and blend well.  In a small bowl whisk together vinegar, olive oil, honey, lime juice and mint.  Pour over quinoa and rice mixture and toss.
