Sesame Ginger Salmon Salad

Makes 1 Serving


1 cup Minute® Ready to Serve Organic Red Quinoa and Brown Rice with Garlic
1 cup power blend coleslaw mix (Brussels sprouts, napa cabbage, kohlrabi, broccoli, carrots, and kale)
1/2 pouch (5 oz.) salmon, drained and flaked
1/4 cup sesame ginger salad dressing
2 Tbsps fresh lime juice
2 Tbsps chopped fresh cilantro leaves
1 Tbsp dry roasted peanuts, chopped (optional)


Heat quinoa and brown rice according to package directions.  In a medium bowl toss together quinoa and brown rice, slaw blend, salmon, dressing, lime juice and cilantro.  Top with peanuts, if desired.
