Cinnamon Rice and Raisin Pudding

1 2/3 cups water
1 1/3 cups Minute® Brown Rice, uncooked
1/2 cup raisins
1/2 cup fat free sour cream
1/2 cup 1% low fat milk
1/4 cup brown sugar
1/2 tsp ground cinnamon
1/4 cup sliced almonds


  • Bring water to boil in medium saucepan on medium-high heat. Add rice and raisins; stir. Cover. Reduce heat to medium-low; simmer 5 minutes. Remove from heat; let stand, covered, 5 minutes.
  • Mix sour cream, milk, brown sugar and cinnamon until well blended. Add to rice mixture; mix well.
  • Spoon evenly into small bowls; sprinkle each with 2 tablespoons of the almonds.
