Chicken Kabob Dinner

2 lbs boneless skinless chicken breast, cut into 1 inch cubes
2 cups red pepper pieces (1 inch)
2 cups zucchini chunks (1 inch)
2 cups medium-sized mushrooms
12 metal or wooden skewers
1 cup Ranch salad dressing
2 cups Minute® White Rice or Minute® Brown Rice, uncooked


  • PREHEAT grill to medium heat. Thread chicken and vegetables alternately on skewers; place in shallow dish.
  • POUR dressing over kabobs. Refrigerate 20 minutes to marinate. Remove kabobs from marinade; discard marinade.
  • GRILL kabobs 10 min. or until chicken is cooked through, turning occasionally.
  • WHILE kabobs are grilling, prepare rice according to package directions. Serve kabobs over hot rice.
  • Substitute rib-eye beef steaks or any firm-fleshed fish, such as halibut or tuna, for the chicken.
