Quick Mexican Pork Molé

A 'quick' Mexican-style recipe with pan-simmered pork tenderloin ... CHOCOLATE, and spicy crushed red pepper.  Our simplified recipe version has lots of flavor, just like the original, but with a fraction of the ingredients.

2 cups Minute® White Rice or Minute® Brown Rice
1 cup onion, chopped
1 each garlic, minced
1 Tbsp oil
1 lb pork tenderloin, cut into bite-sized pieces
1 cup barbecue sauce
1 piece unsweetened baking chocolate, finely chopped
1 tsp crushed red pepper flakes


  • Prepare rice according to package directions.
  • Cook and stir onion and garlic in hot oil in large skillet on medium heat until tender. Increase heat to high. Add pork; cook and stir 5 minutes or until pork is golden brown on all sides.
  • Add 1/2 cup water, barbecue sauce, chocolate and crushed red pepper; mix well. Bring to a boil; cover. Reduce heat to medium-low; simmer 10 minutes or until pork is cooked through, stirring occasionally.
  • Serve over rice.
