Cheesy Chicken and Vegetable Skillet

A hearty chicken and veggie skillet dinner --- made with green beans.  Or, try your favorite frozen veggies, asparagus, or sugar snap peas!

Makes 6 (1-1/2 cups each) Servings


non-stick cooking spray
1 1/4 lbs boneless skinless chicken breast, cut into bite-size pieces
3 cups chicken broth
3 cups Minute® White Rice, uncooked
1/2 lb (8 oz.) pasteurized prepared cheese product, cubed
1 red bell pepper, cut into strips
1 pkg (12 oz.) frozen green beans, thawed
1/2 tsp ground black pepper
1/2 tsp garlic powder
1/2 cup French fried onions


  • Spray large skillet with cooking spray. Add chicken; cook and stir on medium-high heat 2 minutes or until no longer pink.
  • Stir in water. Bring to boil. Add rice. Reduce heat to low; cover. Cook 10 minutes.
  • Add all remaining ingredients except onions; mix well. Cook until cheese is completely melted, stirring occasionally. Sprinkle with onions.
