Thai Coconut Soup

Makes 1 Serving


1 cup Minute® Ready to Serve Jasmine Rice
3/4 cup coconut milk
1/4 cup chicken broth
1/2 tsp ground ginger
1/2 tsp curry powder
1/2 cup frozen Asian-style mixed vegetables, thawed
1 tsp lime juice
1/2 tsp salt
1/2 cup cooked shrimp, peeled and deveined
1 Tbsp chopped fresh cilantro leaves, optional


Heat rice according to package directions.  In a medium microwave-safe serving bowl combine rice, coconut milk, broth, ginger, curry, vegetables, lime juice, salt and shrimp, if desired.  Microwave on HIGH 1 to 2 minutes, or until soup is heated.  Top with cilantro, if desired.
