Heat rice according to package directions. Place kale in a bowl and top with rice, cucumber, celery, salmon, peanuts and cilantro. Serve immediately with lemon wedge.
To pack ahead and serve cold: Let rice cool to room temperature after cooking. Assemble ingredients in an airtight container and refrigerate until ready to eat.
To pack ahead and serve hot: Assemble ingredients except rice in an airtight container and refrigerate until ready to eat. Microwave rice just before serving.
