Brown and Wild Rice and Sweet Spicy Salmon Lettuce Cups


Makes 1 Serving


1 cup Minute® Ready to Serve Brown and Wild Rice
1 pouch (2.5 oz.) Chicken of the Sea® Sweet & Spicy Pink Salmon
1/3 cup cucumber, finely chopped
1/3 cup bean sprouts
1/3 cup celery, finely chopped
4 butter lettuce leaves
2 Tbsps soy sauce
1 tsp chili sauce
fresh chives for garnish, if desired


Heat rice according to package directions. Use while still hot or let cool to room temperature.  Place rice, salmon, cucumber, bean sprouts, and celery in lettuce leaves.  Stir together soy sauce and chile paste. Serve immediately with sauce for dipping. Garnish with chives if desired.

To pack ahead and serve cold:  Let rice cool to room temperature after cooking.  Assemble ingredients according to directions above.  Place lettuce wraps in an airtight container and sauce in a separate container; refrigerate until ready to eat.
