Veggie Fried Rice

Makes 4 Servings


1 bowl Minute® Ready to Serve Family Size - Whole Grain Brown Rice
2 Tbsps vegetable oil, divided
2 large eggs, beaten
2 cups frozen mixed vegetables, thawed and drained
1 cup fresh bean sprouts
1 can (8 oz.) sliced water chestnuts, drained
2 Tbsps soy sauce
1 tsp sesame oil


Heat rice according to package directions.  Heat 1 tablespoon oil in in a large wok or skillet over medium heat.  Add egg and quickly stir fry until just set.  Add rice, vegetables, bean sprouts, water chestnuts, soy sauce, sesame oil and remaining vegetable oil.  Stir fry 2 minutes.
