Speedy Ham Fried Rice

1 bowl Minute® Ready to Serve Family Size - White Rice
2 Tbsps vegetable oil
1/2 cup green onion, sliced
1/2 cup celery, sliced
1/2 cup carrot, diced
1 cup ham, diced
2 Tbsps soy sauce
2 large eggs, beaten


Heat rice according to package directions.  Heat oil in in a large wok or skillet over medium heat.  Add onion, celery and carrots and stir fry 2 minutes.  Stir in rice, ham and soy sauce.  Continue to stir fry until heated through.  Pour in eggs and cook, stirring constantly, until eggs are done.  Serve with additional soy sauce, if desired.
