Southwest Chicken Bowl

1 cup Minute® Ready to Serve Rice and Quinoa
2 oz cooked diced chicken breast
1/2 cup frozen southwest mixed vegetables, thawed
1/4 cup salsa
1 Tbsp chopped red onion
sour cream (optional)
avocado, diced (optional)


Heat rice according to package directions. In a small microwave-safe bowl combine chicken, vegetables, salsa and onion.  Microwave on HIGH one minute. Stir in prepared rice. Serve with sour cream and diced avocado, if desired.
