Curried Waldorf with Quinoa

Makes 1 to 2 Serving

Ingredients

1 cup Minute® Ready to Serve Brown Rice and Quinoa
1/4 cup apple, chopped
2 Tbsps celery, chopped
1 Tbsp raisins
1 Tbsp chopped walnuts
4 oz vanilla yogurt
1/4 tsp curry powder
2 Tbsps shredded Cheddar cheese

Directions

Heat rice according to package directions.  In a small bowl, combine apple, celery, raisins, walnuts, yogurt and curry powder. Blend well. Stir in rice. Top with cheese.

ADD IN OPTIONS: 

• 2 ounces cooked shredded chicken
• 2 ounces diced firm tofu
