Bombay Basmati Rice

Makes 1 to 2 Serving


1 cup Minute® Ready to Serve Basmati Rice
2 Tbsps shredded carrots
1 Tbsp raisins
1/4 cup unsweetened coconut milk
1/4 tsp curry powder
2 oz cooked chicken, chopped
fresh cilantro leaves, optional
toasted coconut (optional)


Heat rice according to package directions. In a small microwave-safe bowl, combine carrots, raisins, coconut milk and chicken. Microwave on HIGH one minute. Stir in rice. Top with toasted coconut and garnish with cilantro if desired.
