Shrimp Chutney with Basmati Rice

Makes 1 to 2 Serving


1 cup Minute® Ready to Serve Basmati Rice
2 oz cooked shrimp
2 Tbsps chutney
1/4 cup plain yogurt
1 Tbsp chopped fresh cilantro leaves
1 Tbsp chopped peanuts
red onion slices


Heat rice according to package directions.  In a small microwave-safe bowl, combine shrimp and chutney.  Microwave on HIGH 30 seconds.  Stir in yogurt, cilantro and rice.  Top with peanuts.  Then top with red onion slices, if desired.
