Sweet Chili Shrimp with Quinoa

Makes 1 to 2 Serving


1 cup Minute® Ready to Serve Brown Rice and Quinoa
3 oz cooked shrimp, peeled and deveined
1/2 cup frozen Asian-style mixed vegetables, thawed
2 Tbsps sweet chili sauce
2 Tbsps sliced green onions
1 Tbsp chopped peanuts


Heat brown rice and quinoa according to package directions.  In a small microwave-safe bowl, combine shrimp and vegetables.  Microwave on HIGH for 30 seconds.  Stir in sweet chili sauce and prepared brown rice and quinoa.  Blend well. Top with green onions and peanuts.
