Cheesy Rice Stuffed Chicken Breasts

Makes 8 Servings


1 cup Minute® White Rice, uncooked
2 Tbsps cream cheese, softened
1 cup shredded Cheddar cheese
1 cup frozen chopped broccoli (thawed)
8 boneless skinless chicken breasts
1/4 cup Ranch salad dressing
8 boneless skinless chicken breasts


  • Preheat oven to 350°F. Prepare rice according to package directions.  
  • Mix cheeses, cooked rice and broccoli until well blended; set aside.  
  • Place chicken breasts on a solid surface between two pieces of plastic wrap or wax paper. Gently pound each chicken breast until about 1/4-inch thick.
  • To stuff chicken breasts ... place top-sides down, on large cutting board; spread evenly with rice mixture. Starting at one of the short ends, tightly roll up each chicken breast; place, seam-side down, in 13x9-inch baking dish.
  • Drizzle assembled stuffed chicken breasts evenly with dressing.  Bake 35 to 40 minutes or until chicken is cooked through (170°F).
