Cheesy Chicken Simmer

Makes 4 Servings


2 cups Minute® White Rice or Minute® Brown Rice, uncooked
2 tsps oil
4 boneless skinless chicken breasts
2 cups frozen broccoli florets
1 can (10 3/4 oz.) condensed cream of chicken soup
1/4 lb (4 oz.) pasteurized prepared cheese product, cubed


  • Prepare rice according to package directions.
  • Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 7 minutes, turning after 3-1/2 minutes.
  • Add broccoli; stir. Stir in soup and diced cheese until well blended. Reduce heat to medium; simmer 7 minutes or until chicken is cooked through.
  • Serve over the hot cooked rice.
  • You can use any condensed cream soup and frozen vegetable combination that you have on hand, such as cream of mushroom soup and frozen peas.
