Cheddar Chicken and Rice Skillet

Makes 4 (1-1/2 cups each) Servings

1/2 cup zesty Italian reduced fat dressing
4 boneless skinless chicken breast, cut into strips
2 cups Minute® Brown Rice, uncooked
1 1/4 cups fat free reduced sodium chicken broth
2 cups broccoli florets
1 1/2 cups chopped tomato
1 cup 2% milk shredded reduced fat mild Cheddar cheese
1/2 cup green onion, sliced


  • Heat dressing in large nonstick skillet on medium-high heat. Add chicken; cook and stir 2 minutes.
  • Stir in rice, broth and broccoli. Bring to boil; cover. Reduce heat to low; simmer 5 minutes or until chicken is cooked through and rice is tender. Let stand covered, 5 minutes or until liquid is absorbed.
  • Add tomatoes, cheese and green onion; stir until blended.
  • Sprinkle with black pepper or a few dashes of hot pepper sauce.
