Cheesy Rice and Tomatoes

Minute Rice and tomatoes get a creamy, cheesy makeover.

1 Tbsp vegetable oil
1/2 cup onion, chopped
2 cups Minute® White Rice, uncooked
2 cups chicken broth
2 tomato, chopped
1 pkg (8 oz.) cream cheese
1/4 cup shredded Parmesan cheese
1 Tbsp chopped fresh parsley


  • HEAT oil in medium saucepan over medium heat. Add onions; cook and stir 3 minutes or until tender.
  • STIR in rice, broth and tomatoes. Bring to a boil. Reduce heat to low; simmer 3 minutes.
  • ADD cheeses and parsley; stir until blended. Remove from heat. Let stand, covered, 5 minutes before serving
  • For a main dish, add 1 pound cooked, peeled shrimp.
