Prepare Rice and Quinoa according to package directions. Combine cooked Rice and Quinoa, broccoli slaw and chicken in a medium bowl; mix well. Add salad dressing and toss to blend well.
Tip: Add the following to “plus up” your salad:
1 small avocado, peeled and sliced
2 large eggs, soft or hard-boiled or salmon (as substitute for cooked chicken)
1 large scallion, minced
1 teaspoon sesame seeds
1 lime, sliced in quarters
