Cilantro Lime Rice

Makes 4 Servings


1 cup Minute® Jasmine Rice
1 cube chicken bouillon, crushed
1 Tbsp vegetable oil
1/4 cup onion, chopped
1 each garlic clove, chopped
1/2 tsp ground cumin, optional
1 Tbsp lime juice
1/4 cup fresh cilantro leaves, chopped
salt and ground black pepper, optional


Prepare rice according to package directions, adding crushed bouillon cubes to water. Heat oil in medium skillet over medium heat.  Sauté onion 2 minutes, then add garlic and cumin, if desired.  Sauté 30 more seconds.  Remove from heat and fold in cooked rice, lime juice and cilantro. Season with salt and pepper, if desired.
