Quick and Easy Fried Rice

Makes 6 Servings


2 cups Minute® Jasmine Rice
2 Tbsps vegetable oil
1/2 cup green onion, sliced
1/2 cup celery, sliced
1/2 cup carrot, diced
1 cup ham, diced
2 Tbsps soy sauce
2 eggs, beaten


Prepare rice according to package directions. Heat oil in large skillet over medium-low heat. Add onions, celery and carrots to skillet; cook over medium heat until tender crisp. Stir in cooked rice, ham and soy sauce; heat thoroughly. Pour in eggs and cook, stirring constantly, until eggs are done. Serve with additional soy sauce, if desired.
