Cuban Burrito

Makes 4 Servings


1 pkg Minute® Ready to Serve Black Beans and Rice
4 8-inch whole wheat tortillas
1 lime
1/4 cup low fat mayonnaise
1 large dill pickle, diced
1/2 cup shredded Swiss cheese, divided
1/4 lb thinly sliced deli-style ham, divided
1/2 cup shredded red cabbage, divided
salsa (optional)


  • Prepare the black beans and rice according to package directions.  In a small bowl, stir beans and rice to mix well.
  • Lightly heat tortillas on both sides in a dry skillet on medium heat.
  • In a small mixing bowl, zest and juice the lime. Add mayonnaise and diced dill pickle; stir to combine. Spread a thin layer of flavored mayonnaise on each tortilla.
  • Top each tortilla with grated Swiss cheese, ham slices, bean and rice mixture; then, sprinkle cabbage on top and fold like a burrito, first sealing the two ends then rolling up tightly.
  • Slice tortilla wraps diagonally and serve with salsa, if desired.
