Black Bean Veggie Burgers

Makes 4 Servings


1 pkg Minute® Ready to Serve Black Beans and Rice
1 egg
1/2 tsp ground cumin powder
1/2 tsp paprika
1/2 tsp dried oregano
1 shallot, minced
1 each garlic, minced
1 small red bell pepper, chopped
1/4 cup bread crumbs
4 slices Cheddar cheese
1 tsp olive oil
4 hamburger buns


  • Prepare black beans and rice according to package directions but do not combine. Using the back of a fork, mash up the black beans until they turn into a paste-like consistency and set both rice and beans aside to cool.
  • Meanwhile, in a medium-sized mixing bowl, beat one egg. To the same bowl, add the cumin, paprika, oregano, shallot, garlic, bell pepper and breadcrumbs. Fold in the black beans and rice and mix until well blended. Form the burger mixture into four patties and, using your thumb, insert the slice of cheddar cheese in the center of each burger. If making sliders, use a scoop to portion out 8 smaller patties.
  • Heat a medium sauté pan or cast iron skillet on medium-high heat and add olive oil.  Carefully add the burger patties and cook for about 3-5 minutes on each side until slightly browned and warm throughout. Place the cooked patties on toasted burger buns.
