Easter Rice Pie

Makes 6 Servings


1 cup Minute® White Rice, uncooked
1 refrigerated pie crust dough
1 container (15 oz.) ricotta cheese
1 cup sugar
3 eggs, lightly beaten
1 tsp vanilla extract
1 Tbsp orange zest
powdered confectioners sugar for garnish (optional)


  • Preheat oven to 375°F. Prepare rice according to package directions. Cool.
  • Unroll pie dough and arrange in glass pie dish. Set aside.
  • In the bowl of a food processor or blender, combine ricotta, sugar, eggs, vanilla and zest. Process until smooth, about 20 seconds. Stir ricotta mixture into rice.
  • Pour into prepared pie dough. Bake 35 minutes, or until crust is golden and pie is set. Remove from oven and cool 15 minutes.
  • Sprinkle with powdered sugar and serve warm.
