California Rice Salad

How's this for side dish made easy?  Start with cooked Minute Rice, Dole Pineapple chunks, arugula or spinach, add in cooked bacon, red onion, just a touch of olive oil and tangy Dijon mustard.

2 cups Minute® White Rice, uncooked
1 can (20 oz.) pineapple chunks
1 1/2 cups packed arugula or spinach
1/2 lb sliced bacon, cooked, drained, and crumbled
1/2 cup red onion, sliced
1/3 cup olive oil
1 Tbsp Dijon mustard
salt and ground black pepper, to taste


  • Prepare rice according to package directions.
  • Drain pineapple; reserve 1/4 cup juice.
  • Combine rice, pineapple chunks, arugula, bacon and onion in large bowl.
  • Whisk together olive oil, reserved juice and mustard in small bowl. Salt and pepper to taste. Pour over rice mixture; toss to coat.
