Beef and Rice Florentine

Easy mealtime idea, ready in about 20 minutes ... all it takes is one pan.  Just brown ground beef, add in chopped spinach, tomato and seasonings; bring to a boil, add rice and remove from heat.   Let stand for 5 minutes and dinner's ready.

Makes 4 Servings


1 lb ground beef
1 Tbsp oil
1 Tbsp onion, finely diced
1 pkg (10 oz.) frozen chopped spinach
1 cup water
1 tomato, diced
1 tsp salt
1 tsp oregano
1 1/2 cups Minute® White Rice, uncooked
1 Tbsp grated Parmesan cheese


  • Brown beef and onion in oil, leaving in bite-sized chunks.
  • Push meat mixture to side of pan and add spinach, water, tomato, salt and oregano. Break up spinach and bring to boil.
  • Stir in rice, cover, remove from heat and let stand 5 minutes. Sprinkle with cheese and serve.
