Fajita Rice

A fast, easy Mexican-style meal favorite recipe from 1992 ...  with Minute Whole Grain brown rice, pan-fried steak, onions, and bell peppers.

Makes 4 Servings


1 1/2 cups Minute® Brown Rice, uncooked
1 Tbsp oil
3/4 lb beef flank steak, thinly sliced
1 onion, thinly sliced
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1 1/2 tsps garlic powder
1/2 cup water
1/4 cup lime juice
1 tsp hot sauce
1/4 tsp ground black pepper


  • Prepare rice according to package directions, omitting margarine and salt.
  • Heat oil in a large skillet, cook and stir meat, vegetables and garlic powder until meat is browned.
  • Add remaining ingredients; bring to a boil. Reduce heat and simmer 5 minutes. Serve over hot cooked rice.
