Greek Beef and Rice

This recipe appeared in the Incredibly Easy Minute Rice Recipes cookbook in 2009.

Makes 4 Servings


1 cup Minute® White Rice, uncooked
1 lb lean ground beef
2 zucchini, sliced
1/2 cup onion, chopped
1 each minced garlic
1 can (14 1/2 oz.) tomato sauce
1 tsp dried oregano leaves, crushed
1 tsp salt
1/8 tsp ground black pepper
1/4 cup sliced ripe olives (optional)


  • PREPARE rice according to package directions.
  • BROWN beef in large skillet over medium heat, stirring occasionally to separate beef. Pour off all but 2 tablespoons drippings.
  • ADD zucchini, onions and garlic to skillet; cook and stir until crisp-tender.
  • STIR in tomato sauce, oregano, salt and pepper; cover. Simmer 10 minutes, stirring occasionally.
  • STIR in rice; heat thoroughly, stirring occasionally. Garnish with olives, if desired.
