Grilled Ginger Lime Swordfish and Vegetables

Makes 4 Servings

Ingredients

1 cup mayonnaise
2 Tbsps lime juice
2 tsps fresh ginger root, peeled and finely chopped
1/4 tsp ground red pepper (cayenne)
4 (2 lb.) swordfish steaks, 1-1/2 inch thick
2 red bell peppers, seeded and sliced into quarters
2 zucchini, cut in half lengthwise
2 cups hot cooked Minute® White Rice

Directions

  • Preheat grill to medium heat.
  • In a medium-size bowl, mix mayonnaise, juice, ginger and ground red pepper. Reserve 1/4 cup of the mayo mixture for later use; brush remaining mayo mixture evenly onto the fish and vegetables. Place on grate of grill; cover with lid.
  • Grill 5 to 8 minutes on each side or until fish flakes easily with fork and vegetables are crisp-tender.
  • Serve over rice; top evenly with the reserved 1/4 cup mayo mixture.
  • Use Your Broiler:  Brush fish and vegetables with mayo mixture as directed. Place on rack of broiler pan. Broil, 5 to 7 inches from heat, 5 to 8 minutes on each side or until fish flakes easily with fork and vegetables are crisp-tender. Serve as directed.
