Classic Stuffed Peppers

My mother passed away over a year ago and Dad just let me go through her items to choose what I wanted. I came across my Grandmother's recipe boxes!I discovered her family famous Green Pepper recipe. Of course only ingredients were listed, no measurements. She always kept boxes of Minute Rice on hand so I came to this web site to see what I could find. This Classic Stuffed Pepper is similar but: Instead of tomato sauce use spicy catsup-Heinz Chili Sauce. Add a bit of sugar and chili powder to taste. Because she picked the green peppers fresh she would place the peppers into hot water to soften them before cutting. When the peppers were stuffed she poured tomato soup over all and baked in a covered dish. Since schools are closed and we are snowed in for the next couple of days and am reliving my childhood spent in grandmother's kitchen. Enjoy!
