Asian Pecan Shrimp and Rice Salad

Is it a salad, light lunch, or dinner recipe??  Just start with Minute Rice, cooked shrimp, toasted pecans ... and add green onions, teriyaki sauce ... chill for one hour, and you decide.

1 1/2 cups Minute® Premium Rice
1 lb medium shrimp, cleaned, cooked
1 cup pecan halves, toasted, chopped
1 cup green onion, sliced
1/4 cup teriyaki sauce
2 Tbsps oil


  • Prepare rice according to package directions.
  • Mix rice, shrimp, pecans and onions in large bowl. In a small bowl, whisk teriyaki sauce and oil until well blended. Add to rice mixture; mix well. Cover.
  • Refrigerate at least 1 hour before serving.
  • How to Toast Nuts: Spread in single layer on baking sheet. Bake at 350°F for 5 to 7 minutes or until lightly toasted.
