Fiesta Shrimp Creole

2 cups Minute® Brown Rice, uncooked
2 Tbsps vegetable oil
2 Tbsps all purpose flour
1 green bell pepper, chopped
2 ribs of celery, chopped
2 each minced garlic
1 jar (12 oz.) thick and chunky salsa
1 can (8 oz.) tomato sauce
1 tsp hot pepper sauce (optional)
1 1/2 lbs shrimp, peeled and deveined*
sliced green onions, optional


Mix oil and flour in large saucepan. Cook over medium heat 6 to 8 minutes or until browned, stirring constantly.  Add bell peppers, celery and garlic; cook and stir 4 minutes or until tender. Stir in salsa, tomato sauce and pepper sauce, if desired; simmer 10 minutes, stirring occasionally.  Stir in shrimp; cook 6 to 8 minutes or until shrimp are cooked through. Top with green onions, if desired.  Serve over rice.
