Pepper Steak

Ingredients

2 cups Minute® White Rice, uncooked
1 boneless beef sirloin steak (1 lb.), 1/2 inch thick, fat trimmed*
1/2 tsp garlic powder
1/4 tsp ground black pepper
1 Tbsp vegetable oil
1 green bell pepper, cut into strips
1 red bell pepper, cut into strips
1 onion, sliced (optional)
1 cup light teriyaki sauce
1 Tbsp cornstarch

Directions

  • PREPARE rice according to package directions.
  • SLICE steak into thin strips; season with garlic powder and pepper.
  • HEAT oil in large nonstick skillet over medium-high heat. Add beef; cook and stir 4 to 5 minutes or until cooked through. Add bell peppers and onions, if desired, and cook until crisp-tender.
  • COMBINE teriyaki sauce and cornstarch, and add to beef mixture. Bring to a boil, stirring constantly. Simmer 2 minutes, or until sauce thickens slightly. Serve over rice.
  • * Or substitute 1 pound boneless skinless chicken breasts.
