Caribbean Pork and Rice
Mmm, delicious: lightly browned pork tenderloin with crisp onions, carrots, and Dole pineapple with BBQ sauce, and zippy ginger simmered with Minute Rice.

pork tenderloin, cut into chunks

oil

onion, chopped

carrot, chopped

(20 oz.) pineapple chunks, drained

cup
water
1/4
cup
barbecue sauce
1
tsp
ground ginger
1
green bell pepper, chopped

cups

White Rice
, uncooked
Directions
COOK tenderloin in oil in a large skillet over medium-high heat. Add onions and carrots and cook until pork is no longer pink inside.
STIR in pineapple, water, barbecue sauce, ground ginger, green pepper and rice.
BRING to a boil; cover and let stand 5 minutes.
Substitute: boneless skinless chicken breasts for the pork tenderloin.
