Caribbean Pork and Rice

Mmm, delicious:  lightly browned pork tenderloin with crisp onions, carrots, and Dole pineapple with BBQ sauce, and zippy ginger simmered with Minute Rice.

Makes 6 Servings

Ingredients

1 lb pork tenderloin, cut into chunks
1 Tbsp oil
1 onion, chopped
2 carrot, chopped
1 can (20 oz.) pineapple chunks, drained
1 cup water
1/4 cup barbecue sauce
1 tsp ground ginger
1 green bell pepper, chopped
2 cups Minute® White Rice, uncooked

Directions

  • COOK tenderloin in oil in a large skillet over medium-high heat. Add onions and carrots and cook until pork is no longer pink inside.
  • STIR in pineapple, water, barbecue sauce, ground ginger, green pepper and rice.
  • BRING to a boil; cover and let stand 5 minutes.
  • Substitute: boneless skinless chicken breasts for the pork tenderloin.
