Korean Style Rice Bowl

Makes 1 Serving


1 cup Minute® Ready to Serve Organic Brown Rice
1 tsp gochujang (Korean chili pepper paste)
1 tsp soy sauce
1/2 cup fresh baby spinach leaves, chopped
1/4 cup shredded carrots
1/4 cup cucumber, peeled, seeded and chopped
2 oz cooked beef, thinly sliced
1/2 tsp sesame oil, optional


Heat rice according to package directions.  In a medium bowl combine gochujang and soy sauce.  Microwave on HIGH 30 seconds.  Stir until paste and soy sauce are combined.  Add rice, spinach, carrot and cucumber and toss to coat with sauce.  Top with beef and microwave 30 seconds. 

Top with fried egg and drizzle with sesame oil, if desired.  

Tip:  May substitute sriracha sauce for gochujang.  This can be found in the international or Korean aisle at most grocery stores.
