Eight Treasure Meatloaf Muffins

green onions, chopped

hoisin sauce, divided

(20 oz.) crushed pineapple, divided

eggs, beaten

Five-Spice powder

garlic cloves, minced
Directions
Coat a 12-cup muffin tin with non-stick cooking spray and set aside. Preheat oven to 350º F.
In a large bowl, combine pork, rice, green onions, 1/4 cup hoisin sauce, 1 cup crushed pineapple, eggs, seasoning, and garlic. Mix well.
Scoop 1/4 cup pork mixture into prepared muffin tin. Bake 30 minutes.
In a small bowl, combine remaining pineapple and hoisin sauce and set aside.
Remove meatloaf muffins from oven and serve with sauce.
