Eight Treasure Meatloaf Muffins

Makes 6 (2 Muffins Each) Servings


non-stick cooking spray
1 lb ground pork
1 cup Minute® White Rice, uncooked
4 green onions, chopped
1/2 cup hoisin sauce, divided
1 can (20 oz.) crushed pineapple, divided
2 eggs, beaten
1/2 tsp Five-Spice powder
4 garlic cloves, minced


  • Coat a 12-cup muffin tin with non-stick cooking spray and set aside. Preheat oven to 350º F.
  • In a large bowl, combine pork, rice, green onions, 1/4 cup hoisin sauce, 1 cup crushed pineapple, eggs, seasoning, and garlic. Mix well.
  • Scoop 1/4 cup pork mixture into prepared muffin tin. Bake 30 minutes.
  • In a small bowl, combine remaining pineapple and hoisin sauce and set aside.
  • Remove meatloaf muffins from oven and serve with sauce.
