Quick Kale Salad with Smoked Salmon

Makes 1 Serving

Ingredients

1 cup Minute® Ready to Serve Brown and Wild Rice
2 Tbsps mayonnaise
1 tsp Dijon mustard
1 cup kale, stems removed and roughly chopped
4 oz smoked salmon, thinly sliced

Directions

Heat rice according to package directions. In a medium bowl, combine mayonnaise and Dijon mustard.  Stir in rice, kale and salmon.
